How do I safely double a recipe?

Hi - when I was a kid (more years ago than I care to admit), mom would make the "Favorite Coffee Cake" from the Betty Crocker cook book for the family, in a 9 x 13 pan.


I decided to bring one of those coffee cakes to her house as a surprise for us all this Thanksgiving, but when I pulled my cook book out to look at the recipe (it's on page 55 of my version, which is from 1975! It's not in my 1991 version), I see it calls for a 9" round or an 8" or 9" square pan.


Can I safely just double it for the 9x13 size? I really don't want to make it twice.

Yes, you can double the recipe and bake it in a 9 x 13-inch pan.  (If you look at the directions on the back of a cake mix box, you'll see you can make the box cake in either 2 8-inch or 9-inch pans or 1 9 x 13-inch pan.)  Baking time, however, will increase using the 9 x 13-inch pan.
